Although this quick snack is relatively self-explanatory, it’s definitely worth sharing! Perfect for when you’re running late and need something in a jiffy.
To make:
- toast a slice of bread or two of your choosing (this was a gluten-free seeded selection from New Cascadia Bakery in Portland)
- slice open an avocado and using a fork, mash half of it
- scoop out avocado onto toasted bread and spread evenly
- now for the fun part: toppings!
- cherry tomatoes if you have them
- fresh squeezed lemon
- drizzle of extra virgin olive oil
- dash of seasonings ~ paprika, cumin, sea salt + ground pepper
- sprinkled with nutritional yeast
- topped w/ sesame + flaxseeds
